<従来の技術及びその問題点> 従来から一般に乾麺を製造するためには、製麺

のように乾燥させる方法としては古くから第3図
に示すように、エンドレスに張り渡した回転チエ
ーンaに掛け棒bを一定間隔で配設し、この掛け
棒bに対して約240cm程度に切断した麺線cを、
2つ折りするようにして吊下せしめ、その移動過
程において乾燥せしめていたのである。しかし、
この方法は、加水率の低い麺線cにおいてのみ可
能であつた。加水率の高い麺線cは、加水率が高
いために、いわゆる引つ張り強度が弱く、前記の
ように片側が120cm位になると、麺線cの自重に
よつて途中で千切れるように分断してしまうため
であつた。しかし、生麺にしろ乾麺にしろ、加水
率を高めにした麺は、加水率の低いものに比して
味の点で優れているため、多加水の乾麺を製麺し
ようとする傾向にあり、そのためには第4図に示
すように、前記と同様に掛け棒bに蛇行状に麺線
cを吊下せしめる。しかしこの場合、同図イに示
すように第一の工程で2本の掛け棒bに掛けた麺
線cを、その中間から40cm程度に引下げ、全体と
した蛇行状にし、このまま約3時間程度熟成時間
をおき、次に同図ロに示すようにさらに2倍程度
引き伸し、ここでも3時間程度熟成時間をおき、
さらに同図ハに示すようにさらに引き伸してここ
でも一定時間の熟成時間をおき、これを数回繰り
返すのである。したがつて多加水麺の場合は、最
終的な細さの乾麺にするためには、長時間を要す
ることになり、またこのような延伸を行なうため
にも、力を入れすぎるとたちまち切断してしまう
ことから、熟練者でなければ行なうことができな
いという不便さも伴なつていたのであつた。そこ
で本発明者は上記の問題点を解決するものとし
て、特開平2−65753号公報に示されているよう
に、横設した2本の筒状回転体を1対とし、これ
を麺線の進行方向に複数対配設し、また前記1対
の筒状回転体のうち、麺線の進行方向前方の筒状
回転体を後方の筒状回転体よりも回転周速を早く
して、これによつて前記筒状回転体上に麺線を掛
け渡しながら麺線を延伸させるようにした麺線延
伸装置を開発したのであつたが、これによると、
確かに延伸作用は行われるが、延伸中に麺線が切
断してしまうことがあつた。このように切断され
た麺線は、筒状回転体とこれに隣り合う筒状回転
体の間に垂れ下がつた状態となつて前進せず、む
しろその間に落下してしまうという問題を有して
いたのであつた。

のまま搬送されるという効果を有するのである。
