ケーキの所望形状に対応した形状(図では箱形)とした
ケーキの成形型1内にポリプロピレン製の耐熱フィルム
2を成形型の内形に沿って装着する。前記成形型1内に
溶融ゼリー3を適量流し込み、ついでスポンジケーキ材
料4を流し込む。このときに溶融ゼリー3とスポンジケ
ーキ材料4との間に種々のフルーツを入れることもでき
る。前記のようにしてできたゼリーとスポンジケーキと
を内装した成形型1をオーブンに入れ、適温(例えば16
0℃で15分程、ゼリーの変性を防ぎ、かつスポンジケー
キが焼成し得るように定める)に加熱して、スポンジケ
ーキを固化する。前記成形型1をオーブンから取り出し
た後、ゼリー付スポンジケーキを成形型1から取り出
し、耐熱フィルム2の余った部分でスポンジケーキの底
部を包むと、耐熱フィルム2で包装され、適宜形状のゼ
リーを盛り付けられた状態でケーキ(ゼリー付スポンジ
ケーキ)が出来上る。また、ゼリーから溶け出す水分は
スポンジケーキが吸収するので、ベトつかないケーキが
