び留添からなる3段仕込みを4日間にわたって次のよう
にして行う。1日目の最初の仕込みとなる初添は、第1
図に示すように、原料総米320kg、蒸米230kg、麹米90k
g、エキス抽出液285を酒母に加えて11〜12℃で仕込
む。2日目は、仕込みを行わずに酵母の十分な増殖を行
い(踊り)、3日目に仲添を行う。この仲添では、第1
図に示すように、原料総米580kg、蒸米445kg、麹米135k
g、エキス抽出液695を加えて9〜10℃で仕込む。そし
て、4日目に最後(3回目)の仕込みである留添を行
う。この留添では、第1図に示すように、原料総米940k
g、蒸米750kg、麹米190kg、エキス抽出液1325を加え
て7〜8℃で仕込む。この後、10〜12日目で品温が15〜
16℃になるように温度調節し、この温度を5〜6日続け
てから徐々に温度低下させるようにして、20日程度で並
行複発酵を行ってもろみを製造し、その発酵末期(20日
目)にもろみに食塩160kgを添加して、不可飲処理す
る。発酵末期の成分変化は、第2図に示すようになって
いる。即ち、ボーメ又は清酒メーター(比重計)の数値
が、留後19日目では−4.3(甘口)であったのが、同20
日目(加塩後)にはボーメ4.1となり、アルコール成分
が19.4%から19.0%に変化する。以上により、塩分3.6
