At first In a bowl, start mixing dry ingredients. Add besan. Add rava and rice flour Add salt.

Add red chilli powder, turmeric and hing. Mix well
Add ajwain and mix well
Add a pinch of baking soda. Mix well till combined. Mix and keep aside -

In a bigger bowl add onion slices
To this, add the dry mixture, add palak. Mix well till besan mixture coats all onion slices
Add a couple of tbsp of water. Mix well. Bind it all together -

Heat oil on low-medium flame. Make small lemon sized balls with the onion mixture. Slowly drop into heated oil. Repeat for a few more pakodas
Fry on medium flame till golden
Remove from oil and put pakoras on kitchen paper towels to drain off excess oil. -

Pakodas are ready to Serve.

But I, being an experimental cook, ensure that every bit of the vegetable is utilized. My recent experiment with making arbi stem pakoras was a great success and I was pleasantly surprised to find them so delicious and crispy and just perfect for the monsoon evening snacks when accompanied with ketchup.
